INGREDIENTS
  • 1 1/2 teaspoons vegetable oil
  • 1/2 small small onion, diced
  • 2/3 cup uncooked long-grain rice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 3 ounces canned diced tomatoes
  • 1 teaspoon salt
  • 1 1/2 cups water
DIRECTIONS
  1. In a large saucepan, heat oil over medium heat. Stir in onion and saute until translucent.
  2. Pour the rice into the pan and stir to coat grains with oil. Mix in cumin, chili powder, tomatoes, salt and water. Cover, bring to a boil then reduce heat to low. Cook at a simmer for 20 to 30 minutes or until rice is tender. Stir occasionally.
Peppered Cilantro Rice

NGREDIENTS
  • 1 small onion, finely chopped
  • 1/2 cup finely chopped sweet red pepper
  • 1/2 cup finely chopped sweet yellow pepper
  • 2 garlic cloves, minced
  • 1 tablespoon olive or canola oil
  • 2 cups water
  • 1 cup uncooked long grain rice
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons minced fresh cilantro or parsley
DIRECTIONS
  1. In a saucepan, saute the onion, peppers and garlic in oil for 2-4 minutes or until crisp-tender. Add the water, rice, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 18-22 minutes or until the rice is tender. Remove from the heat. Add cilantro; fluff with a fork.
Nutritional Analysis: One serving (2/3 cup) equals 156 calories, 3 g fat (0.55 g saturated fat), 0 cholesterol, 295 mg sodium, 30 g carbohydrate, 1 g fiber, 3 g protein. Diabetic Exchanges: 2 starch.
Spanish Rice with Bacon

INGREDIENTS
  • 6 bacon strips, diced
  • 1 tablespoon canola or vegetable oil
  • 1 medium onion, chopped
  • 1 cup uncooked long grain rice
  • 1 3/4 cups water
  • 2 large tomatoes, chopped
  • 1 medium green pepper, chopped
  • 2 jalapeno peppers, seeded and chopped*
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
DIRECTIONS
  1. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Add oil to the drippings; saute onion for 3 minutes. Add rice; stir until golden brown, about 5 minutes. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until rice is tender. Sprinkle with bacon.
When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.

  • 1 cup powdered non-dairy creamer
  • 1 cup instant chocolate drink mix
  • 3/4 cup instant coffee granules
  • 1/2 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
DIRECTIONS
  1. In a medium sized glass jar, combine the non-dairy creamer, chocolate drink mix, instant coffee, sugar, cinnamon and nutmeg; mix well.
  2. To prepare, place 2 tablespoons mix in a mug, pour in 3/4 cup boiling water, and stir until dissolved. Serve hot.

  • 1 cup instant coffee granules
  • 1 cup confectioners' sugar
  • 4 cups powdered milk
  • 1/2 (7 ounce) jar nondairy amaretto-flavored creamer
DIRECTIONS
  1. In a large bowl, combine chocolate drink mix, instant coffee, confectioners' sugar, powdered milk and nondairy creamer. Store in an airtight container.
  2. To serve, Stir 3 tablespoons mixture with 6 ounces boiling water.
Peach Ice Cream

  • 6 eggs, beaten
  • 3 1/2 cups white sugar
  • 10 fresh peaches, pitted and chopped
  • 4 cups heavy cream
  • 2 cups half-and-half cream
  • 2 teaspoons vanilla extract
  • 3/4 teaspoon salt
DIRECTIONS
  1. In large bowl, mix together eggs and sugar until smooth; puree peaches in blender or food processor and stir 5 cups of puree into egg mixture. Stir in cream, half-and-half, vanilla and salt and mix well.
  2. Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer's instructions.
Fresh Fruit and Yogurt Ice Pops

INGREDIENTS
  • 2 cups fresh blueberries, raspberries, strawberries and sliced bananas, mixed
  • 2 cups plain or vanilla yogurt
  • 1/4 cup white sugar
  • 8 small paper cups
  • 8 popsicle sticks
DIRECTIONS
  1. Place the mixed blueberries, raspberries, strawberries, sliced bananas, yogurt, and sugar into a blender. Cover, and blend until fruit is chunky or smooth, as desired.
  2. Fill paper cups 3/4 full with fruit mixture. Cover the top of each cup with a strip of aluminum foil. Poke a popsicle stick through the center of the foil on each cup.
  3. Place the cups in the freezer for at least 5 hours. To serve, remove foil and peel off the paper cup

Break the unrefined sugar (panela) into small pieces.
Se corta la panela en pedazos pequeños.

Cocimiento

Place the unrefined sugar and the cinnamon sticks in a medium saucepan. Pour in the milk, keeping aside 1 cup.
Place the cornstarch with the cup of milk in a bowl and mix until the cornstarch is all dissolved. Then pour it into the saucepan.
Cook over a low heat, stirring constantly until the sugar has melted and it becomes thick.
Then pour it into dessert dishes and add some cinnamon powder on top.
Let it cool down in the refrigerator for an hour before serving.

En una olla mediana se pone la panela con las astillas de canela. Encima, se vierte la leche.
En una taza de leche se disuelve la maicena y se vierte en la olla.
Se pone a cocinar todo a baja temperatura, rebullendo constantemente hasta que la panela se haya derretido y empiece a espesarse; una vez esté bien espesa, se sirve en pequeños platos de postre con un poco de polvo de canela por encima.
Los platos se meten a la nevera durante una hora y luego se sirven.
